Marinating this meaty fish makes it perfect for your grill or broiler.
- 1Â˝ lbs. swordfish
- Â˝ cup olive oil
- Juice of 1 lemon
- 1 tsp. oregano
- 1 onion, minced
- Sea salt
- 1 tsp. freshly ground black pepper
- Wooden skewers
Cut swordfish into 2″ cubes. Thread swordfish onto skewers. Combine all other ingredients in a small bowl and pour over swordfish cubes. Refrigerate for 30 minutes.
Preheat oven to broil. Place swordfish on baking sheet. Brush with remaining marinade. Broil about 6â€ť away from broiler for about 12 minutes, flipping several times to cook evenly. Serve with additional lemon wedges.
