Mashed Potatoes 3 Ways

- 3 lb. potatoes
- 1 cup skim milk
- 3 Tbsp. butter
- Â¼ cup light sour cream
- Salt and pepper, to taste
Wash and peel potatoes. Slice into medium chunks.
In a large stockpot, bring water to boil, add potatoes and boil until tender.
Drain and mash (alternately, use a potato ricer).
In a saucepan, warm milk and butter. Stir into mashed potatoes, and then stir in sour cream.
Season to taste with salt and pepper. If potatoes appear dry, add additional warmed milk as needed.
